In an Australian first, Spanish chorizo is now available to chefs. Chorizo Confit Manolete is a 100 per cent Spanish chorizo hailing from the Asturias region in the north of Spain. Made using traditional methods and techniques that have been practised for hundreds of years, the chorizo is made from premium pork cuts and flavoured with paprika. It is then cured for five weeks before it is confited in oil to retain the authentic richness and intensity of flavour that is uniquely Spanish.
